Wimberly, Texas
Just returned from a long weekend in Wimberly at the rustic place we have found. We stayed in a different house this time, at first I was disappointed. But I think I might like this place better than the first.
This is what I fell in love with......this kitchen/dining room is lined with windows that look out over the treetops and the creek below......

And this patio is where we spent most of our time......and then we got the added surprise that the shower was outside.....attached to the bathroom but outside.....It was a hoot!!! will post photos later!!

Working in San Antonio
I worked in our San Antonio part of last week. It was fun, lots of good eats. After dinner one night, I treated myself to a chocolate ice cream cone from Ben & Jerry's, I was having trouble taking the picture and keeping it from dripping everywhere!!
It was cloudy and overcast most of the time but at least that kept it a little cooler. The riverwalk was still fun!!
There was a noisy storm on Thursday night, but I ate dinner, made a short trip down the riverwalk, and got back to the hotel before the downpour started....
The hotel had peacocks that walked around in the courtyard.....

The Tower of Americas was very close to the hotel. Working out of town is fun but it is nice to get back home!!

Really good recipe....
I subscribe to a food blog and this was one of the recipes that she posted. The photo is hers, I didn't get a picture of our casserole before much of it was eaten or packed up for lunches. It is really, really, REALLY good!! And it would be great to take to a church function or to a friend. The ingredients are easy enough to have on hand all the time....
Chili Relleno Casserole
1 pound ground beef
1 green pepper, chopped
1/2 teaspoon salt
1/4 teaspoon ground oregano
1/4 teaspoon garlic powder
2 cups shredded cheddar cheese
2 cups shredded monterey jack cheese
2 cans (4 ounces each) chopped green chilies
4 eggs
3/4 cup milk
1- 8 ounce can tomato sauce
In a skillet brown ground beef. Add green pepper and cook until pepper is tender.
Add green chilies, salt, and spices to meat mixture and set aside.
In a bowl combine eggs and milk.
In a 9 x13 pan layer 1/2 of meat and about 1/2 cup cheddar cheese and 1/2 cup monterey jack cheese.
Add another layer of meat and another layer of cheese. Leave remaining cheees to use on top after baking.
Pour egg milk mixture over the top of the cheese.
Bake at 350 for 30 minutes. Remove from oven and spread tomato sauce over top. Then sprinkle with remaining cheese. Bake for 7 more minutes.
Remove from oven and let sit about 10 minutes before serving.
Enjoy!
**I know the chopped chilis come in different degrees of "hot"....I might try one can of hot and one can of mild next time.....
